Lobster on the Grill with Basil Mayonnaise

Can I make a lobster on the grill? I love lobster! We have them for special occasions. My favorite time of year is New Year’s Eve. The best way to enjoy lobster is to get them fresh as this allows you to enjoy the full flavor of the lobster. You can click for more information here. The following recipe is how to prepare for the grill.

Ingredients

  • 3 cups basil leaves
  • 1 1/2 cups Vegetable Oil
  • 1/2 cup olive oil
  • 2 cups mayonnaise
  • 2 teaspoons Dijon mustard
  • 4 tsp lemon juice
  • Salt and Pepper to Taste
  • 4 freshly killed lobsters, cut in half lengthways and cleansed

Instructions:

1.For basil oil, place the basil leaves in a bowl and pour steaming water over them, let steep for roughly 30 seconds till they turn a brighter green. Drain and refresh under cool running water, drain once more, and squeeze dry with a paper towel. Place in a food processor and include both oils and set the processor to puree

2.Line a sieve with cheesecloth and set it over a deep bowl. Pour basil and oil puree and leave undisturbed for 1 hour, or till all the oils have filtered through into the bowl. The solids left in the sieve can now be disposed of.

3.Mix mayonnaise with a splash of basil oil. Include Dion mustard, lemon juice, and salt and pepper to taste. Cover well and chill until required. NOTE: The rest of the basil can be utilized with pizza, pasta, grill fish, or grill shrimp.

4.Preheat grill to 350 Degrees F. We recommend using a pellet smoker grill.

5.If you need to kill the lobster yourself, freeze the lobster for 2 hours, prior to placing them into a pot of salted boiling water for just 2 mins. Remove the lobster and plunge them into cold water to freshen. Cut them in half, remove the stomach sac from behind the head.

6.Brush basil oil over the cut side of each lobster half. Place cut side down on grill, cover, and grill for 8 mins, or until they are properly cooked

7.Serve grilled lobster with basil oil mayo.
